Preheat the oven to 275 and let’s get started:
Set a pan of water to boil on the stove. Here are the ingredients we need to finish up:
1 1/3 cups lentils from Castelluccio
3 T. good olive oil
2 cloves garlic, minced
1 T dried dill (or 4T fresh)
Fresh basil, thinly sliced
3 oz. sweet gorgonzola, crumbled
Drain well in a colander, and while still warm, add to the large bowl with the marinated red onions.
